Ramen is humble – born from tradition and perfected through patience. At La Neige Nishikan, we honor that ethos while pushing the envelope. Our goal is to blend the time-honored techniques while implementing our own to create a truly special dining experience for our guests.

 

After over a decade as Head Chef at Mimi’s—Hakuba’s premier fine dining Italian restaurant—and serving as Executive Chef for Hakuba Hospitality Group, Chef Kazu is turning his focus to a longtime dream: a passion project devoted to high-end, handcrafted ramen. With a deep respect for technique, seasonality, and bold flavor, this new venture marks an exciting new chapter in his culinary journey.
