After over a decade as Head Chef at Mimi’s—Hakuba’s premier fine dining Italian restaurant—and serving as Executive Chef for Hakuba Hospitality Group, Chef Kazu is turning his focus to a longtime dream: a passion project devoted to high-end, handcrafted ramen.
